March 22, 2016. Ioana Negulescu. This Banh Mi pâté recipe follows the secrets of Hanoi's most popular Banh Mi stall: it's spiced to perfection, flavoursome and fresh! During last year's trip in Vietnam I discovered the delicious Banh Mi, a Vietnamese baguette sandwich with pâté, different types of ham, carrots, fresh coriander and daikon.

Directions. Place the baguette on a flat surface. Spread the bottom half of the baguette with butter and the top half with mustard. Lay the slices of pâté on the bottom half the baguette and top.

First, julienne and sauté your choice of veggies (we suggest opting for mushrooms, onions, and peppers). Slice a fresh baguette in half and evenly toast both sides. Spread a smooth layer of Dijon on the inside of the warm, crispy bread. For your sandwich filling, include a few thin slices of our Herb de Provence Pâté, and stuff to the brim.

Add the butter and stir until it melts. Add the chicken livers and ground pork in the saucepan and simmer for 2 minutes. Then, mix in the other ingredients into the saucepan and cook for about 7 minutes or until the liver's temperature measures to about 160 °F and it feels firmer to the touch.
