Easy Swedish Red Beet and Apple Salad Recipe Apple salad, Quick

In a medium bowl, mix together the beets, apples, and onion. Set aside. In a separate bowl, mix together the mayonnaise, sour cream or creme fraiche, Dijon mustard, and salt and pepper. Add the wet ingredients to the beet mixture and stir to combine evenly. Cover and put in refrigerator to chill, 1 hour or more, to allow flavors to blend.

Whisk the mayonnaise, creme fraiche and horseradish (if using) together in a medium bowl. Gently fold in beets, apple and parsley. Add 1-3 tablespoons of the beet pickling juice until the salad has a lovely pink hue. Season to taste with salt and pepper. Cover and refrigerate until ready to serve.

Put pickled beets in a strainer placed over a bowl to catch the pickling liquid. Once drained, chop beets into small cubes. Add mayonnaise, sour cream, horseradish, and Dijon mustard to a large bowl and mix together until well combined. Add chopped beets and sliced onion to the mixture.
