Here's a little known fact - I'm a BIG fan of waffles. I might even say that they're one of my favorite foods. I grew up on the sweet kind, but recently, I've become a huge fan of a good savory waffle. And I think this recipe for my Cabot Seriously Sharp Cheddar-Green Chile and Ham Waffles will win over any "I-prefer-only-sweet.

In a bowl, combine the jerk seasoning, brown sugar, garlic and salt. Rub seasoning mixture all over pork roast. If doing this step the night before, place the pork in a rimmed baking dish or rimmed sheet pan, cover and refrigerate.
