Recently, I have become a big fan of smoking pheasant on my Traeger Grill. The meat comes out tender, juicy, and flavorful. My favorite method is to take some of my favorite recipes with poultry and replace them with smoked pheasant. One of my favorite cold-weather meals is chicken tortilla soup that my wife makes on occasion at our home.

Smoked Pheasant. Step #1 - Bring 3 gallons of water to a boil, adding all ingredients, reduce heat to simmer and cook for 15 minute. Step #2 - Turn off heat and allow to cool. Submerge pheasant in brine and place in refrigerator for 6-8 hours. Step #3 - Brine birds 8 hours in refrigerator or cooler filled with ice.

Tortilla Soup. Set the lime juice, cilantro and cooked pheasant to the side to be added in the final 5 minutes before serving. Add all the other ingredients to a large heavy-bottomed stock pot and bring to a rolling boil. Reduce to a simmer for about 30 minutes. Add the lime, cilantro, and pheasant and return to a simmer and serve.

Pheasant Tortilla Soup Ingredients: 1/2 green pepper 3 ribs celery 1 medium onion 2 cloves garlic Chop or mince the 4 above ingredients together and sauté in ; 2 tablespoons of oil until soft. Directions: Filet out one whole pheasant and boil it on low boil for about 30 minutes. Cut the meat into small chunks.

Directions: In large stock pot or Dutch oven add olive oil, onion and garlic cooking over medium heat until onions start to sweat. Add cilantro, 4 torn tortillas and green chilies cook for another 3 minutes stirring continually. Add stock, pheasant, spices, corn, beans and remaining 4 tortillas. Bring soup to a boil and reduce heat to simmer.
