We've been buying organic nectarines 10 pounds at a time for all sorts of fun and today I'll be sharing our new nectarine fruit leather recipe with you. I will say this: if you can eat store bought items like these AND you're not into DIY food projects, skip this recipe. I can honestly say that this recipe is a labor of time and love.

Dehydrate: Place the tray into the dehydrator and dry for 6 to 10 hours at 145°F. The length of drying time will depend on the type of fruit, the moisture content, and how thickly it is spread. About halfway through the drying time, check the fruit leather. If one side seems to be drying faster, rotate the tray.

Bring to a simmer, cover, and let cook on a low heat for 10 to 15 minutes, or until the fruit is cooked through. Uncover and stir. Use a potato masher to mash up the fruit in the pan. Season with sugar and spices, if desired: Taste the fruit and determine how much sugar, lemon juice, or spices to add.

Lightly spray with a little oil. Coconut oil is our preferred oil for fruit leather. Spread the fruit puree mixture to a thickness of about 1/4″ on your prepared trays. Set the dehydrator to 135 degrees, the optimal setting for fruits. Stack your trays and leave them for approximately 6 hours.
