Wow, thanks! I'll have to try both. The first one is so simple that I can't imagine it'd be right, but maybe it's just that simple. I don't think the second one will taste quite right-- green enchilada sauce is rather tangy, and their baja sauce doesn't taste like it has enchilada sauce in it.
