Add the can of beans along with their liquid and use that to deglaze the pan. Stir through the harissa, oregano and cream and let simmer for another 5-10 minutes (depending on how much time you have). While the beans are simmering, toast your bread. Fry off the onion and garlic: before adding in the aubergine to soften. Blend together all the sauce ingredients: until smooth. Into the pan add the sauce, beans and season well: and allow to summer for 10 minutes until thick and juicy. Ladle into bowls and enjoy: with wholegrains or bread.
