Homemade vinaigrette keeps well for 7 to 10 days. If your vinaigrette solidifies somewhat in the fridge, don't worry about it—real olive oil tends to do that. Simply let it rest at room temperature for 5 to 10 minutes or microwave very briefly (about 20 seconds) to liquify the olive oil again. Whisk to blend and serve.

Instructions. Add the oil, vinegar, mustard, garlic powder (or fresh), honey or maple syrup, salt, and pepper to a small bowl or a small mason jar. Preheat oven to 350 F. Lightly toss grapes with one teaspoon of olive oil and a pinch of salt. Roast for 1 hour. Remove from oven. Process grapes through a food mill or food processor. Then press through a fine sieve into a small mixing bowl (this should yield about 1/8 cup of grape juice). Add a pinch of salt, shallot and balsamic vinegar.
