Agree that this recipe is fantastic! I've made the French Laundry gazpacho too and while it's delicious, it requires so many ingredients and an overnight sit in the refrigerator. Too much work for the summer IMO. For a full meal, I'll layer quinoa and gazpacho in a bowl, and then top with hard boiled eggs. So good!
