Bake the loaves for 35 to 40 minutes, or until an instant-read thermometer inserted into the center reads 205°F to 210°F. The single, larger loaf will bake for 45 to 50 minutes. If the bread appears to be browning too quickly, tent it lightly with foil after 25 minutes of baking. Remove the loaves from the oven, and transfer them to a rack.

First clear flour is a high extraction wheat flour. Essentially, whole wheat flour has some of the bran sifted out but not as much as for white flour, which at one time was called "Second Clear Flour," as I understand it. So, compared to white flour, First clear flour has more bran and wheat germ and higher ash content.

Soak the bread in 1/3 cup (2 5/8 ounces, 74g) cool water. Store in the refrigerator overnight. Next day squeeze out any excess water from the cubes and mash the old bread by hand, or using a mixer with paddle attachment set on the lowest speed. MikeV. Thanks! That bread was 70% 1150-grade rye flour and 30% "first clear" wheat flour (the original recipe called for 1050-type wheat flour). Half of the rye (35% on total) was used for the levain/"vorteig." Maybe much more useful than the above, though: I got the recipe from Lutz Geißler's "Brotbackbuch #2."

This is a 75% hydration dough, while the Hamelman Miche is 82% hydration. The result was a really nice, moderately sour bread with the distinct flavor of first clear flour. The crust was crunchy, but it needed 10 extra minutes in the turned off oven to crisp up. The crumb was quite open with a lovely cool feeling and chewy texture.
