For beginner bakers, I encourage them to break the process into two days and allow the dough to go through an overnight rise in the fridge. Prepare the dough the first day according to the recipe, and place it into a well-oiled bowl. Cover it with plastic and place it into the fridge to rise overnight.

In a bowl, add the flour, yeast and milk. Mix, cover and rest for 15 minutes. With a Kitchenaid with a dough hook, add the rest of the flour along with butter, eggs, salt, sugar and vanilla. Mix for 7 minutes at medium speed. Add the "sponge" into the bowl and keep mixing for another 7 minutes.

To freeze, bake them and allow them to cool completely. Place on a baking sheet and transfer to the freezer and chill for 1 hour. Transfer the pan dulce to a freezer-safe container and/or freezer-safe bag and freeze for up to 3 months. To thaw, place on a baking sheet on a kitchen counter.

Bake in a preheated oven at 325º degrees for 20 minutes, or until the bottom of the conchas are lightly golden. If you are placing more than one baking sheet in your oven, rotate them after 10-12 minutes. Move the sheet on the bottom rack to the top rack and vice versa to have an even baking.

Let mixture sit for 5 minutes to make sure the yeast is active. Add butter and eggs, and mix well. Add 3 ½ cups of flour to the bowl, then add salt.

To make this pan dulce, follow the recipe for the shell, minus the cinnamon. I like to add 1/4 cup (27g) shredded coconut and 1/2 teaspoon vanilla extract. Break the topping mixture into little chunks, place it on your dough after brushing with egg wash, and sprinkle with sparkling sugar.

Divide into two parts, and place one part in a separate bowl. If making chocolate conchas, add cocoa powder to one of the bowls, and mix until fully incorporated. When the dough is done rising, divide into 12 pieces. Make sure the dough pieces are the same size, or they will not bake evenly.
