Place all the pâté ingredients in a large bowl and mix together well with a wooden spoon. Season to taste with salt and pepper. Transfer to a food processor and blend until it forms a smooth paste. If the breadcrumbs are quite dry, you may need to add a little more oil or red wine, if using.

Add olive oil and chopped onion to a frying pan or skillet on medium heat. Sauté the onions until softened. Add crushed garlic, dried rosemary and red pepper flakes and sauté for a minute to toast the spices. Add sliced mushrooms and sauté until they have released water and the water cooks off.
