Blanch and chop the spinach: Blanch the spinach in a pot of boiling water until the spinach is wilted, about 30 seconds to 2 minutes. Drain and rinse in cold water to stop the spinach from cooking further. Squeeze the spinach to remove all the moisture possible. Chop the spinach and set aside.

How to Make a Spinach, Tomato, and Bacon Sauté. In a large skillet over medium heat, cook the bacon until crisp. Remove and place on paper towels to drain. Remove all but 1 teaspoon if you have more grease. Add the olive oil to the pan, once hot add the grape tomatoes, and cook, stirring occasionally for 2-3 minutes.

Remove the bacon from the pan and place on a paper towel lined plate. Set aside. Add the chopped shallot to the sauté pan, and cook until translucent, about 1-2 minutes.
